Fireside offers grass fed and grass finished lamb. Grass fed lamb is commonly known as “land salmon” because of its high omega-3 content and other maximized essential nutrients. This type of lamb contains nutrient rich fat, we encourage you to enjoy every bite of it.
If you’ve never had lamb, we recommend you to try our ground lamb first. Ground lamb can be used for burgers, in a traditional Shepherd’s Pie, or as a ground beef substitute in any recipe. This will introduce your taste buds to the rich and delightful lamb flavors that it provides.
Cuts Available:
- Ground Lamb: Packaged in 1 pound portions. A new take on a customer favorite, our ground lamb makes delicious burgers, meatloaf, meatballs, and more! Try ground lamb in any recipe that calls for beef!
- Whole Leg Roast: 1 bone-in whole leg roast with shank on. Averages 5lbs. Our largest roast, recommended to cook low and slow. Perfect for feeding a family of 5+.
- Shanks: 2 shanks per package. S 1.05-1.25lbs , M 1.25-1.45lbs , L 1.45-1.65lbs. Lamb shanks are savory and often braised whole with a little bit of flour and finished in the oven on low with a thin layer of red wine.
- Frenched Rib Racks: Halves or Wholes available. Halves: S 0.50-0.55 , M 0.60-0.65lbs , L 0.70-0.80lbs. Wholes: S 1.05lbs, M 1.2lbs, L 1.35lbs. A rack of ribs, connected at one end, which includes the flavorful and meaty rib chop. One of our absolute favorite cuts! These delicious lamb ribs are cut from a select section of the lamb. We like these smoked or slow cooked in the oven. A fantastic BBQ item.
- Leg Roast: 1 boneless whole leg roast, shank off. 2.8-3.00lbs. A tender and larger roast than the loin roast, no bones. Perfect for feeding a family of 3-4.
- Loin Roast: 1 roast, bone-in, per package. S 0.7-0.8lbs , M 0.8-0.9lbs , L 0.9-1.00lbs. A smaller roast than the whole leg, but perfect for feeding a family of 2-3. This roast still includes the flavors you receive from the bone-in.
- Shoulder Chop: 2 larger chops per package. 0.7-1.1lbs. Lamb shoulder chops contain some portion of back bone on the bottom half of the chop. The fat is distributed more throughout this chop than other chop. Braising this cut and cooking it no more than medium, brings out the full flavor of the meat and helps break down some of the connective tissue to truly enjoy it.
- Loin Chop: 2 chops per package. 0.4-0.5lbs. While loin chops taste slightly different than rib chops, they are equally versatile. Grill them, pan-fry them, or bake them and you will appreciate the mild sweet flavor all around.
- Rib Chop: 2 chops per package. 0.3-0.45lbs. Our smallest chops, but full of flavor. On the grill, in the pan, or in the oven, the choices are endless with this sweet and flavorful cut. Red wine marinades pair wonderfully while the grill is getting hot.
- Leg Steaks: 2 steaks per package. S 1.25-1.35lbs , M 1.35-1.45lbs , L 1.45-1.55lbs. A lamb leg steak comes from the center of the leg. This thick and center-cut is meaty and best for grilling, broiling, and pan searing.
- Neck Steaks: 2 steaks per package. 0.7-0.9lbs. A lamb neck steak is the most perfect cut for braising. This tender steak is not quite as hearty as the leg steaks, but is full of body and flavor. It is a prized favorite with Chef Kyle Krieger of Les Cochons d’Or in Hot Springs, VA.
- Kabobs: 0.5-0.75lbs. Lamb kabobs make a well rounded and wonderful grilling package for summer time. These cubed cuts of meat are perfect for experiencing a full lamb flavor in any recipe without the hassle of cutting it off the bones.
- Stew: 0.5-0.75lbs. Lamb stew meat is an undervalued cut. These chunks of meat are similar to the kabob in which they are great in any stew recipe. Typically, stew meat comes from spare cuts of the leg, shoulder, or shank during the trimming and packaging process. Full of flavor in just the right bite size.
